Have you ever wanted to discover the secrets of authentic traditional polenta, just like grandmothers used to make it? The kind that requires time, passion, and the right ingredients? At La Polenteria di Brunate, you can learn the ancient art of making polenta just as it was prepared in the past.

Our cooking classes "Polenta & Passion" are not just simple cooking lessons: they are a journey into the gastronomic culture of our region, a chance to get hands-on (or better said, hands in polenta!) and rediscover authentic flavors in a warm, convivial atmosphere.

What You Will Learn During the Cooking Class

Under the expert guidance of our chef, you will discover:

The best corn flours: from classic bramata to taragna, learn how to recognize and choose the right varieties for each type of polenta

Traditional techniques: copper cauldron, slow and patient cooking, wooden ladle, and all the tricks to achieve the perfect texture

Traditional pairings: porcini mushrooms, mountain cheeses, braised meats, and much more to elevate every preparation

Hands-on preparation: working in pairs, you’ll cook different types of polenta (classica, concia, taragna) and then share them with the whole group

Evening Program

6:30 pm – Welcome
We welcome you to our Polenteria with a warm and friendly atmosphere. This is the moment to meet other participants and get ready for an unforgettable experience.

​

7:00 pm – Cooking Class: “Making Polenta the Traditional Way”
Time to get hands-on! After an introduction to the ingredients and traditional techniques, you will start cooking. In pairs, you’ll prepare different types of polenta: classic with butter and cheese, uncia, and taragna. Each pair will have their own cauldron and recipe, with constant guidance from our chefs.

8:30 pm – Convivial Dinner
The highlight of the evening: enjoy the fruits of your work!


Dinner Menu:

Aperitif: Tagliere Sem Cumasc with local cured meats and cheeses + grilled polenta

The polenta you prepared yourself!

A glass of wine + water included

10:00 pm – Closing and Farewell
Before leaving, you’ll receive a keepsake booklet with all the recipes, tips, and curiosities about traditional polenta. This way, you can recreate the experience at home and impress friends and family!
